How to cut up and prepare a jackfruit

How would you cut up a 20 lb., green, lumpy, prickly fruit? Once you figure it out, how long before you slice into it? Well, it took us about a week to gather the courage to tackle this monster; and I am so glad we did! Jackfruit is a sweet, creamy and absolutely delicious fruit!
